BARBERA D'ALBA SUPERIORE DOC

 

 

Grape variety: 100% Barbera.

Vineyard of origin: “Manzoni Superiori” vineyard in the municipality of Monforte d'Alba (Cuneo). The vineyard faces southwest and extends for about a hectare.

Harvesting: Beginning of October.

Winemaking: Traditional extended maceration. Fermentation on wild yeast lasts for up to 30 days, at room temperature and in steel vats, with remontage to break up the submerged cap. It is then transferred in Slavonian oak barrels of medium capacity (30-50hl) after the natural clarification. There the refinement continues for about 6 months, ending in bottle before commercialization. The wine is neither filtered nor stabilized; a thin sediment is possible and decanting is recommended.

Alcohol content: About 14°.

Color: Deep ruby red color with bright crimson tints.

Aroma: Complex, delicate, penetrating aroma, fruity (blackberry and plum) with hints of spices.

Taste: Full-bodied and persistent, with strong character.

Serving temperature: 18-20° C; 64-68° F.

Food pairings: Tasty pasta dishes, meat dishes, hard cheese; goes extremely well with salami.
